The Tradition continues

Every evening, beginning at 5:00 pm, we specialize in serving the most famous native dish of the Door Peninsula, the "Door County Fish Boil". The settlers of past centuries came to this wilderness to seek their fortunes in the heavily timbered forests and bountiful waters of the Peninsula. From their resourcefulness, the Fish Boil evolved, and they provided sustenance for hungry lumbermen and settlers. In preparing the meal, technology has found no way to improve upon the equipment or methods from centuries ago. The authenticity of our Door County Fish Boil is assured, as the technique has been preserved and passed down through generations. The Fish Boil is loved by all who enjoy a good fish dinner and often by those who really do not like fish.

Our Door County Fish Boil consists of fresh, locally caught Lake Michigan whitefish cut into steaks, baby red potatoes, and Texas sweet boiling onions. The ingredients are boiled to perfection outdoors in large stainless steel kettles over a wood fire. Salt is the only seasoning used; its primary function is to increase the boiling temperature of the water. Throughout the cooking process, the fish oils naturally rise to the surface of the water, revealing a delicious, mild flavor. Immediately before removing the fish, potatoes, and onions, "The Master Boiler" will throw #1 fuel oil directly into the fire beneath the kettle, resulting in a tremendous burst of flames that forces the water and fish oils to boil over the rim. This signals the end of the cooking process and the beginning of a wonderful dining experience. The steaming whitefish, potatoes, and onions are immediately served with hot melted butter, lemon, coleslaw, Honey White bread, and Dark Bavarian rye bread, with your choice of non-alcoholic beverage and a slice of Door County cherry pie. So, please make your reservations and arrive 45 minutes before your serving time to experience our "Famous Door County Fish Boil" and enjoy not only a great meal, but a long-standing Door County tradition!
